MAPLE CINNAMON GRANOLA

 As a current Arizonian nature doesn’t give me the normal indicators that the season has changed to fall.  So it’s safe to depend on Trader Joes to inform me. Pumpkin flavored everything. I think they have tripled their collection of creative pumpkin products from last year. Not complaining. I love fall, and currently fall is making me crave maple syrup. I’ve been attempting to put it on everything, butternut squash, sweet potatoes, in vegan cheeses and I actually put some in a stir-fry the other day. Don’t judge me. It was good and yes probably unnecessary. But right now, while I am typing this up on a layover in Kansas City, laying in my hotel bed with little granola crumbs siting in between the letters of my keyboard and dusted on my shirt. I’ve figured out a way to take my maple syrup craving on the road with me! I have made a delicious batch of maple-cinnamon granola with pumpkin seeds as a main player! This granola easily fits in with the fall theme, and is a combination of healthy proteins and fiber.  Pumpkin Seeds  Almonds  Oats  Quinoa  Sesame Seeds  I’ve been adding this granola to the top of smoothie bowls, cashew cream breakfast parfaits or just carting it around as a snack!  INGREDIENTS  1 cup of almonds, roughly chopped  1 cup of rolled oats  ½ cup of pumpkin seeds  ½ cup of quinoa  ¼ cup of pure organic maple syrup  3 tablespoons of coconut oil  2 tablespoons of sesame seeds  1 teaspoon of raw cane sugar or brown sugar  ¼ tablespoon ground cinnamon  INSTRUCTIONS  Preheat oven to 325 degrees Fahrenheit.  In a large mixing bowl add almonds, oats, pumpkin seeds, quinoa, sesame seeds cinnamon and sugar. Stir together.  In a large pan, heat coconut oil and maple syrup. Stirring frequently until the two have visually combined.  Stir in dry ingredients. Mix until everything has been properly coated and then spread evenly on a baking pan.  Bake for twenty minutes. Remove from oven and stir around granola. Put back into the oven and cook for another 5 – 10 minutes. Until golden brown!  Remove from oven & enjoy!
